Mistake 1: Cut vegetables before washing

Mistake 2: Cut raw and cooked food with a kitchen knife

However, everyone should also know that there are a lot of bacteria and parasites in raw food such as livestock and poultry meat and aquatic products. These bacteria and parasites will inevitably remain on kitchen knives and cutting boards when processing and cutting.

If you use these "contaminated" kitchen knives and cutting boards to deal with cooked food, it is tantamount to "contaminating" cooked food. Even if you "scal" it with boiling water before use, it will not completely eliminate bacteria and parasites, and of course it will not have any disinfection effect.

Mistake 3: Boil the dish without boiling water

Because they are afraid that the water temperature is too high to damage the nutrients in the vegetables, some people put the vegetables down before the water boils. In fact, the most serious temperature of chlorophyll loss is not 100°C, but 60-82.2°C, because at this temperature The most suitable chlorophyll enzyme to play (ie destroy chlorophyll). In addition, the blanching time is too long, which will only cause more nutrients in the vegetables to be lost.

Correct method: When blanching vegetables, it is recommended to add as much water as possible, adjust the firepower to the maximum, and shorten the blanching time; and the blanching time should not be too long, generally 5~10 seconds; add a few drops of cooking oil before removing it. A protective film is formed on the surface of vegetable leaves to slow down the oxidation rate of vegetables.


Mistake 4: Dishes are served only when the frying pan is smoking

This is probably a peculiar habit of Chinese cooking. Sometimes in order to increase the aroma of the dishes, they will first "cook the pot", and put the onion, ginger, garlic and other condiments into the smoky oil pot to "cook" the fragrance before cooking.

When the oil is heated to 150°C, the edible oil will already produce "acrolein" which has a strong stimulating effect, which damages the mucous membranes of the nose, eyes and throat. When the oil pan smokes, the temperature of the oil often reaches above 200°C, and the oil smoke produced at this time is very toxic. Long-term exposure to such high-temperature oil fume will increase the risk of lung cancer.

Correct method: It is recommended to serve the dishes before the pan smokes. Generally, insert a bamboo chopstick into the pan. When there are small bubbles around it, it means that the temperature is almost the same.


Mistake 5: Put the salt too early

Adding salt when cooking is a question of the university, too much, too little, not too early, too.

Adding salt to the fried vegetables too early will cause too much juice to flow out of the vegetables, causing loss of nutrients; adding salt to the meat too early will cause the protein to coagulate prematurely, making the meat harder and smaller in size; and adding salt to cold dishes too early , It will make its juice overflow and lose its crispness.

The correct way: when cooking the salt, do not have to rush to put the salt, you can wait for the vegetables to reach the maturity before putting it, or put it before the pot. Remember, daily salt intake should not exceed 6g.


Mistake 6: Do not wash the pot and continue to fry

After the cooking is finished, some fat will adhere to the pan more or less, and when these fats are heated again at high temperature, they will produce more harmful substances, such as aldehydes, low fatty acids, oxides, epoxides, etc., carcinogens Benzopyrene is also among them.

Correct method: After frying a dish, brush the pan first and then fry the next dish. Pay attention to removing the grease attached to the pan. In addition, the cooking oil that has been fried should not be used repeatedly.
